
TOM'S SWEET & SOUR PORK, SHRIMP, OR CHICKEN
First: marinate for 1 Lb of meat chunks with:
1 beaten egg
1 tbs soy sauce
1 tbs corn starch
Cook some white rice to go with the Sweet & Sour Dish.
(sautee uncooked rice on high in a little oil for about 1 minute then add twice the amount of hot salted water as you have rice, boil at medium high until water is at same level as rice, then turn heat to very very low and cover for half hour, it should be done by then, don't overcook rice)
Prepare Sweet and Sour Sauce by mixing:
2 tbs ketchup
1/2 tsp salt
4 tbs sugar
1 tbs soy sauce
3 tbs apple cider vinegar
1 tbs corn starch mixed with 1/4 cup cold water
3/4 cup water
2 tbs pineapple juice
1 tbs ginger chopped
Prepare vegetables:
1 cup fresh pineapple chunks
1 carrot in even sized slices 1/4 in thick slices
1 medium green pepper in one inch squares
1 pickling cucumber
1 onion cut in 1 inch squares
1 Tbs of chunks of fresh ginger
Prepare batter for shrimp, chicken or pork by mixing:
1/2 cup flour
1/2 cup water
1/4 cup cornstarch
1 tbsp. peanut oil
1/2 tsp. salt
1/2 tsp. baking soda
Do these two things at once:
1.) In skillet fry 1 clove of garlic mashed in 2 tbs of peanut oil, then discard garlic and add carrots, green peppers, onions, ginger(chunks) and cucumbers stir frying lightly and seasoning with some soy sauce, don't overcook, and don't put in pineapple chunks until toward the end because you don't want them overcooked. Then add Sweet and Sour Sauce over vegetables and cook until thickened.
2.) Heat enough oil to deep fry battered meat and deep fry the meat.
Pour Sweet and Sour Sauce with vegetables over fried/battered meat.
Serve with the white rice.
